Light tuna, also called Rabil or Yellowfin (for its peculiar yellow fins), is a migratory species that is caught mainly in tropical and equatorial waters and is perhaps the most commonly canned tuna. Its meat is firm and pinkish in color.
 
Once the best specimens have been selected and the cooking process has been completed, the fish is prepared and packaged using traditional techniques. The skill and experience acquired over five generations is part of our secret to achieving the exceptional appearance and flavour that our preserves boast.

The loins of light tuna have been added to our specially selected olive oil. The olive oil, with its intense flavour, adds an exclusive aroma and flavour to our preserves.
