Known as "rice of the Incas", quinoa has been cultivated for over 5000 years. It is a member of the Chenopodiaceae family, along with spinach and beets.
A Quinoa seed looks like a small disc, and its color can vary from yellow to red to black. The quinoa should be cooked for about 10 minutes over low heat in three times its volume of water.
