Agar is extracted from a type of red algae, also called Agar Agar. Presented in a refined powder. Gelling agent which has been used in Japan since the 15th century. It can form gels in very small proportions and can be used to make hot gelatins.
 
Mix and bring to a boil when it cools down. Once gelled, it can withstand temperatures up to 80 °C (Hot Gelatin). Allow it to rest for correct penetration. In acidic medium, it loses part of its gelling ability.
