Heat a good glug of oil in a frying pan on medium-high heat. Season the bream fillets with salt and black pepper. When the oil is hot, carefully lay in the fish, skin-side down. Cook for 3 mins.
TIP: Press the fish gently for the first 30 seconds of cooking to stop it curling up but don't move it or the skin won't be crispy! Turn the fish over and cook for 2 mins more.
